Recipe for iced fairy cakes (makes approximately 12 fairy cakes)


Ingredients 
  1. 150 grams of self-raising flour
  2. 150 grams of butter (preferable softened)
  3. 150 grams of caster sugar
  4. 2 large eggs
  5. 1 tablespoon of vanilla extract
  6. 2 tablespoons of milk
  7. 200 grams of royal icing sugar
  8. Pink food colouring 

Method
  1. Preheat the oven to 275 degrees Celsius.
  2. Beat the sugar and butter together.
  3. Slowly beat in the eggs and vanilla extract.
  4. Add flour and milk and mix until light and fluffy.
  5. Bake for 10-12 minutes .
  6. Cool for 20-25 minutes.
  7. Add a small amount of water to the royal icing sugar beat until smooth.
  8. Add food colouring and mix until blended.
  9. Ice all 12 fairy cakes and place in fridge for 25-30 minutes to let icing set.
